Whether you're hosting a large family gathering or a smaller, more intimate affair, your meal planning can be worry-free.

This holiday season Pierce's is offering an array of main course options:

Whole Turkeys Salt and Sugar Brined for 24 hrs. Rubbed with Pierce's Spice Rub and cooked on our pit over hickory and oak for 6-7 hours. They are spritzed with apple cider every hour and basted last two hours. The turkeys are fully cooked and then cooled and double wrapped to keep them moist. We include the smokey pan drippings (about a pint) on the side for gravy or basting when reheating. They come with re-heating instructions to assist our guests in warming them up for service.

Apricot Glazed Hams Fresh spiral sliced half hams are pit cooked for three hours with hickory and oak. They are then glazed with our house made apricot glaze with notes of cinnamon, clove, and grainy mustard. A nice sweet and savory glaze that brings out the flavor of the ham. They are wrapped fully cooked and include instructions for reheating and a pint container of additional glaze is included.

Brisket We use Certified Angus Beef that is Choice and up quality for our brisket. Our brisket is rubbed with Pierce's seasonings and then cooked for 14 hours very slowly on our pit, achieving a moist tender texture. We slice the brisket and it can be purchased by the pound in pans to reheat or in cryovac packaging for transport. We include a bar-b-que au jus from the pan drippings to keep it moist and flavorful.

Turkey Breast Our turkey breast is a great add on for those that want extra white meat or for those that don't want to deal with bones and left-over's! Our breast contains no fillers, no nitrates, and is Gluten Free. They are rubbed with seasonings and cooked on the pit for about three hours until done. We brush them lightly with our honey bar-b-que sauce and wrap them for reheating. Instructions are included for heating.

To complete the meal, we also offer all the trimmings, including:

Stuffing Traditional savory stuffing with herbs and bread along with stock and butter.

Cranberry Sauce Whole fresh cranberries simmered in sugar with little bit of fresh citrus.

Whipped Yukon Potatoes Golden Yukon potatoes cooked tender and seasoned with milk, butter and salt and pepper for a traditional taste.

Bread and Butter Pickles Made right here using small pickling cukes, salted with sliced onion and then brined in our sugar vinegar and pickling spices, including garlic, mustard seed, turmeric and bay leaf.

And for those who enjoy a sweet end to your meal, you can select from one of our homemade desserts!

Brownies Our house made brownies are made daily with butter, Callebaut chocolate, flour, eggs and pure vanilla. Our brownies are generous sized and have just the right crunch on the outside and softness on the inside.

Pecan Pie 10" pie prepared here by our chef, made with pecan halves (no pieces!), dark syrup, sugar, brown sugar, eggs, butter, pure vanilla baked in an all butter crust.

Pumpkin Pie We make a tried and true traditional 10" pie made with pumpkin, spices, brown sugar, evaporated milk and bakes slowly in an all butter crust.

Cobblers Your choice of cherry, peach or apple all are made in a deep 10"X 12" pan to serve 8-10. Our cobblers are topped with a shortbread crumble that gives the flavorful fillings a sweet buttery taste.
